Dry Sweets & Traditional Pastry Chef

About the role

Doobak Baklava & Sweets is seeking an experienced Dry Sweets and Traditional Pastry Chef to join its production team in Jumeirah Village Circle, Dubai. The role focuses on preparing a variety of dry sweets, traditional pastries, and baklava for high‑volume output.

Key responsibilities

• Prepare dry sweets and traditional pastries according to company recipes.
• Produce doughs, fillings, nuts and other required ingredients.
• Maintain consistent standards for taste, weight, size and appearance.
• Manage preparation, baking and packaging processes.
• Monitor product quality throughout all production stages.
• Use ingredients efficiently and minimise waste.
• Support the development of new products and recipes suitable for the Dubai market.
• Prepare baklava when relevant experience is available.

Required profile

• Proven professional experience in preparing dry sweets and traditional pastries.
• Strong knowledge of dough preparation, fillings, nuts and various baking techniques.
• Ability to produce consistent taste, texture, weight and appearance.
• Experience in high‑volume bakery or pastry kitchen production.
• Capability to inspect raw materials and ensure final product quality.
• Good knowledge of ingredient management and waste reduction.
• Full compliance with food hygiene and safety standards.
• Organised, detail‑oriented and able to meet production schedules.
• Team player who can guide junior staff.
• Must be currently in Dubai or able to relocate.
