Executive Chef – Arabic & Western Cuisine

About the role

Grain Cafe is seeking an experienced Executive Chef to lead its Arabic and Western kitchen operations in Dubai. The successful candidate will be responsible for creating innovative menus, maintaining high culinary standards, and ensuring efficient kitchen performance.

Key responsibilities

• Design and develop diverse Arabic and Western menus that align with brand standards.
• Create and standardise recipes, monitor portion control and manage food cost.
• Oversee daily kitchen operations, including preparation, cooking, and plating.
• Supervise, train and motivate kitchen staff to maintain a productive work environment.
• Implement and uphold HACCP safety procedures throughout the kitchen.
• Coordinate with suppliers to ensure quality ingredients and timely deliveries.
• Maintain inventory records and conduct regular stock audits.

Required profile

• Minimum 10 years of culinary experience within the UAE.
• Extensive background in both Arabic and Western cuisine sections.
• Proven track record in menu development and cost management.
• Fluent in English (reading, writing, speaking).
• Valid UAE driving licence.
• Preference for experience in 5‑star hotels or large‑scale restaurant operations.

• HACCP certification with hands‑on implementation experience.
