Executive Pastry Chef - Steakhouse By Alain Ducasse

About the role

Wynn Al Marjan Island, a new luxury resort opening in early 2027, is looking for an Executive Pastry Chef to lead the pastry operation at its Steak House by Alain Ducasse in Dubai.

Key responsibilities

• Plan and manage daily pastry and bakery production according to forecasts, reservations and event needs.
• Standardise recipes with precise weights, yields, photos and allergen declarations, maintaining up‑to‑date recipe cards.
• Ensure excellence in lamination, fermentation, dough temperature control and chocolate tempering; calibrate ovens, sheeters, mixers and blast chillers.
• Set plating standards, monitor KPIs for taste, texture, portioning and ticket times, and conduct daily tastings and line checks.
• Engage with guests on special requests such as birthday and wedding cakes, dietary needs and host tastings when appropriate.

Required profile

• Formal pastry education preferred (e.g., Diplôme de Pâtisserie or equivalent).
• Minimum 10 years professional pastry experience, including 3‑5 years in a leadership role within luxury hotels, fine‑dining or premium restaurant groups.
• Creativity with a strong aesthetic sense and balanced flavour profiles.
• Proven ability to build, schedule and lead a pastry team, allocating stations based on skill and business needs.

• Laminated doughs, viennoiserie and sourdough techniques.
• Entremets, tarts, petit fours, ice‑creams and sorbets.
• Gluten‑free and vegan pastry adaptations.
• Chocolate tempering, sugar work and modern glazing.
• Operation and calibration of ovens, sheeters, mixers and blast chillers.
