Head Baker

About the role

Minor Hotels is seeking a Head Baker to lead the bakery operations at Desert Islands Resort & Spa by Anantara. This senior culinary position will oversee daily production, ensure the highest quality of baked goods, and uphold the brand’s standards of hospitality and food safety.

Key responsibilities

• Lead and supervise all bakery activities within the assigned outlet.
• Plan, prepare, and execute high‑quality baked products that meet brand standards and guest expectations.
• Maintain strict compliance with HACCP, food safety, hygiene, and sanitation protocols.
• Monitor product quality, consistency, presentation, and portion control.
• Manage bakery inventory, control costs, and minimize waste to achieve departmental targets.
• Collaborate with the Executive Chef on menu development, seasonal offerings, and special promotions.
• Train, mentor, and develop the bakery team to ensure high performance and engagement.
• Coordinate with Stewarding and Engineering to ensure bakery equipment is properly maintained.

Required profile

• Proven experience as a Head Baker, Chef de Cuisine, or Sous Chef in a luxury hotel, resort, or upscale restaurant.
• Formal culinary qualification or equivalent professional training.
• Strong leadership, communication, and team‑management abilities.
• Solid knowledge of kitchen operations, food safety, and cost control.
• Excellent organizational skills with the ability to manage high‑volume service.
• Creative, detail‑oriented, and passionate about delivering exceptional baked goods.
• Flexibility to work shifts, weekends, and public holidays.
