Head Baker – Luxury Resort & Spa

About the role

We are seeking a dynamic Head Baker to lead the bakery operations at our Desert Islands Resort & Spa, part of the Anantara luxury brand. Reporting to the Executive Chef, you will be responsible for delivering exceptional baked goods that reflect the brand’s high standards and enhance the guest experience.

Key responsibilities

• Oversee all bakery and pastry production within the assigned outlet, ensuring consistency, quality, and presentation.
• Plan, develop, and execute menus and daily specials that align with brand standards and guest expectations.
• Maintain strict compliance with HACCP, food safety, hygiene and sanitation protocols.
• Control food costs, manage inventory, and minimize waste to meet departmental targets.
• Collaborate with the Executive Chef on seasonal menu development and special promotions.
• Train, mentor and develop bakery staff, fostering a high‑performance team culture.
• Coordinate with stewarding and engineering to ensure equipment is well maintained.
• Monitor guest feedback and implement improvements to continuously elevate the bakery offering.

Required profile

• Proven experience as a Head Baker, Chef de Cuisine or Sous Chef in a luxury hotel, resort or upscale restaurant.
• Formal culinary qualification or equivalent professional training.
• Strong leadership, communication and team‑management abilities.
• Excellent organizational skills and the capacity to manage high‑volume service.
• Creative, detail‑oriented with a passion for delivering outstanding baked products.
