Head Chef – Pre-Opening

About the role

As the Head Chef for Earth Jumeirah Beach, you will lead the culinary direction, kitchen operations and team, bringing the Earth Brasserie concept to life during the pre‑opening phase and shaping the food identity for future Earth Hotels projects.

Key responsibilities

• Define and execute the culinary vision, develop menus, create signature dishes and ensure consistency in taste, presentation and quality.
• Manage day‑to‑day kitchen operations, workflows, staffing schedules and equipment maintenance across all service periods.
• Lead the pre‑opening programme: kitchen set‑up, equipment selection, OS&E, opening inventories, recipe development, costing and supplier testing.
• Recruit, onboard, train and coach a high‑performing culinary team, establishing clear standards and performance measures.
• Control food cost, payroll, waste and inventory, produce accurate recipe costing and work with finance to meet financial targets.
• Partner with procurement to source quality ingredients, conduct supplier evaluations and champion responsible, seasonal sourcing.
• Document culinary standards, recipes and processes to create a scalable framework for the Earth Brasserie concept across future hotels.
• Ensure full compliance with food safety, hygiene and HACCP regulations and maintain readiness for inspections.
