Senior Chef de Partie – In-Room Dining

About the role

The Palazzo Versace Dubai is seeking an experienced Senior Chef de Partie to lead the In‑Room Dining kitchen. You will ensure flawless service, high‑quality dishes, and seamless coordination during your shift.

Key responsibilities

• Oversee the smooth operation of the In‑Room Dining kitchen during assigned shifts.
• Lead and coordinate food order preparation, guaranteeing timely service and consistent quality.
• Prepare and supervise a wide range of dishes according to luxury hotel recipes and standards.
• Check all orders for accuracy, presentation, portioning, temperature, and quality before dispatch.
• Organise mise en place and allocate daily tasks to Commis Chefs and junior team members.
• Train, supervise and guide junior culinary staff, ensuring adherence to recipes and procedures.
• Handle special guest requests, dietary requirements and VIP orders with care.
• Monitor stock levels, report shortages to the Sous Chef and support food cost control.
• Ensure strict compliance with HACCP, food safety, hygiene and sanitation standards.

Required profile

• Minimum 3–4 years of culinary experience, preferably in a 5‑star luxury hotel or high‑end hospitality environment.
• Previous experience in In‑Room Dining, Room Service or a high‑volume à la carte operation.
• Proven ability to supervise and mentor junior culinary team members.
• Strong attention to detail, ability to work under pressure and flexibility to work shifts, weekends and public holidays.
• Culinary qualification from a recognised institution is preferred.
