Chef de Partie – Fresh Pasta Specialist

About the role

Pasta Chef Sagra is an independent Italian laboratory and restaurant in Dubai, specializing in fresh pasta made from scratch. We are seeking a skilled, hands‑on Fresh Pasta Chef to join our kitchen team in Jumeirah, starting in September.

Key responsibilities

• Produce fresh pasta daily, including egg pasta, filled pasta, long pasta, gnocchi and semolina‑based shapes.
• Prepare doughs, fillings and sauces according to Sagra’s recipes and quality standards.
• Shape pasta by hand and operate professional pasta‑making equipment.
• Cook and plate pasta dishes accurately and efficiently during service.
• Maintain consistency in portioning, texture, taste and presentation.
• Organize daily production according to service and stock requirements.
• Store, label and rotate ingredients and finished products correctly.
• Clean and maintain pasta machines, equipment and the production area.

Required profile

• Minimum 4 years of professional kitchen experience, preferably as a Chef de Partie.
• Proven hands‑on experience making fresh pasta from scratch.
• Good working English.
• Basic Food Handling certificate.
