Senior Sous Chef – Mina Brasserie

About the role

We are seeking a Senior Sous Chef to lead the kitchen operations of Mina Brasserie at Four Seasons Dubai DIFC. Reporting directly to the Executive Chef, you will ensure the delivery of high‑quality Mediterranean and French dishes in a luxury hotel setting.

Key responsibilities

• Select, train, evaluate, motivate and discipline kitchen staff to uphold cultural and core standards.
• Assist in recipe development and guarantee consistent preparation and presentation of all menu items.
• Control labor and operating expenses through effective scheduling, budgeting, purchasing and inventory management.
• Maintain sanitation standards in line with Four Seasons policies and local regulations, ensuring a clean and organized kitchen.
• Monitor food quality, portion consistency and supplier compliance, and communicate operational needs across departments.

Required profile

• Proven experience as a Senior Sous Chef in a luxury hotel or comparable environment.
• Strong leadership and communication abilities, with experience managing multicultural teams.
• Ability to perform under pressure and adapt to varying shift patterns.
• Creative approach to menu development and food presentation.
