Specialty Sous Chef – Wok Cuisine

About the role

Atlantis Dubai is looking for a highly skilled Specialty Sous Chef to lead the wok station at its flagship restaurant, Ling Ling. The role focuses on delivering authentic Asian wok dishes while maintaining the highest standards of quality, safety, and efficiency in a fast‑paced, five‑star kitchen environment.

Key responsibilities

• Manage and organize the wok station, ensuring smooth daily operations.
• Prepare and execute high‑volume wok dishes in line with established recipes and standards.
• Collaborate with the Chef de Cuisine to develop new menu items and improve existing offerings.
• Estimate daily production needs, communicate requirements to the team, and adjust staffing as needed.
• Oversee food purchasing, receiving, storage, and inventory control.
• Ensure all kitchen equipment is functional and report any issues to engineering.
• Train, mentor, and evaluate culinary staff, conducting orientation for new hires.
• Maintain compliance with food safety, sanitation, and all Food & Beverage policies.

Required profile

• 5–7 years of experience in international Asian cuisine within a five‑star hotel or resort.
• Proven ability to lead a high‑volume kitchen team and manage shift operations.
• Strong English communication skills.
• Detail‑oriented with a focus on consistency and quality.
• Ability to thrive in a fast‑paced environment and adapt to market trends.
