Assistant Pastry Chef – Luxury Hotel, Dubai

About the role

We are seeking an Assistant Pastry Chef to join the culinary team at the Dukes The Palm Dubai Hotel, part of the Colbert Collection. This role supports the Pastry Chef in delivering high‑quality pastries and desserts that reflect the luxury standards of a 5‑star property.

Key responsibilities

• Oversee daily pastry and bakery operations, ensuring consistency, presentation and cost efficiency.
• Develop and design new pastry items and seasonal menus in line with brand standards.
• Maintain proper food handling, temperature control and storage procedures.
• Assist the Pastry Chef with menu development and recipe standardisation.
• Lead, train and coach the pastry team, managing performance and scheduling.
• Enforce strict health, safety and hygiene regulations throughout the pastry kitchen.
• Collaborate with other culinary departments to enhance the overall guest experience.

Required profile

• Proven experience as an Assistant Pastry Chef in a large luxury hotel (minimum 500 rooms).
• Pre‑opening experience is an advantage.
• Strong organizational and multitasking abilities in a fast‑paced environment.
• Flexibility to work rotating shifts, including weekends and holidays.
• Effective communication and active listening skills.
