Breakfast Commis (Level 2)

About the role

The Breakfast Commis (Level 2) supports the breakfast service in a 4‑5 star hotel, preparing inventory, assisting chefs, and ensuring that all dishes meet Accor’s quality and presentation standards.

Key responsibilities

• Prepare and maintain inventory lists for the breakfast station.
• Fill in for other chefs when absent, applying basic overall kitchen knowledge.
• Follow standard recipes and plating guides consistently.
• Provide daily market lists and control goods received to guarantee quality and quantity.
• Assist the Executive Sous Chef with recipe costing and special food promotions.
• Monitor food wastage and recommend efficiency improvements.
• Ensure buffet items are replenished, correctly labeled, and meet HACCP standards.
• Maintain equipment cleanliness and safety at the end of each shift.

Required profile

• Diploma or degree in vocational hospitality.
• 1‑2 years experience in a 4‑5 star hotel environment.
• Full compliance with HACCP standards and certification.
