Chef De Cuisine – Farm to Table Modern American

About the role

The Market Kitchen at Royal Meridien Abu Dhabi is seeking a Chef De Cuisine to lead a farm‑to‑table, modern American concept. You will be the culinary face of the restaurant, interacting with guests and VIPs while ensuring the highest standards of food quality and service.

Key responsibilities

• Lead and oversee all kitchen operations, guaranteeing consistency, hygiene and presentation.
• Develop and execute innovative grill‑focused menus, seasonal promotions and signature dishes that reflect the restaurant’s identity.
• Manage culinary staffing – recruitment, training, performance management, succession planning and team development.
• Maintain full compliance with UAE food safety regulations, HACCP standards and sanitation procedures.
• Foster a culture of excellence, accountability and continuous improvement across the brigade.

Required profile

• Act as a visible culinary ambassador, regularly engaging with guests, hotel leadership, media and key stakeholders.
• Excellent communication and public‑relations skills, able to handle guest feedback professionally and drive service recovery.
• Strong command of English; additional languages are a plus.
