Chef de Partie – Cold Kitchen (Arabic Mezze)

About the role

The Chef de Partie will lead the cold‑kitchen section of our main restaurant, focusing on Arabic mezze, salads and other Middle Eastern cold dishes. Reporting to the Head Chef, you will ensure high‑quality preparation, presentation and service in a fast‑paced, upscale hotel environment.

Key responsibilities

• Prepare and present a variety of cold dishes, salads, appetizers and desserts according to authentic Arabic and Middle Eastern recipes.
• Supervise, coach and train junior kitchen staff working in the cold‑kitchen area.
• Maintain cleanliness, organization and hygiene standards in the cold‑kitchen station.
• Monitor inventory levels of cold‑kitchen ingredients, place orders and control waste.
• Collaborate with the Head Chef to develop and update menu items featuring authentic regional flavours.
• Ensure compliance with all food safety and sanitation regulations.

Required profile

• Proven experience as a Chef de Partie or similar role in a cold‑kitchen environment.
• Strong knowledge of Arabic mezze, salads and Middle Eastern cold‑dish techniques.
• Ability to work efficiently under pressure in a high‑volume kitchen.
• Excellent leadership and communication skills.
• Culinary degree or relevant certification is a plus.
