Chef de Partie - Pastry

About the role

The Sofitel Dubai Downtown hotel is seeking a motivated Chef de Partie – Pastry to support the Pastry Chef in daily production and menu preparation. You will work in a fast‑paced, luxury hotel kitchen, ensuring high‑quality desserts and pastries that meet the brand’s standards.

Key responsibilities

• Follow standardized recipes, portion controls, and presentation specifications.
• Assist the Pastry Chef with daily production, menu preparation, and new pastry creations.
• Ensure all products are consistently prepared to required quality and presentation standards.
• Monitor stock levels, communicate requirements, and properly store ingredients and finished products according to food‑safety standards.
• Maintain cleanliness and organization of the pastry section, equipment, and storage areas.
• Follow HACCP, food‑safety, hygiene, and health regulations at all times.
• Minimize food waste through proper preparation, storage, and portion control.
• Support and train Commis Chefs and junior pastry team members when required.
• Work efficiently during busy service periods and meet production deadlines.

Required profile

• Previous experience as a Chef de Partie – Pastry or in a similar pastry/bakery role.
• Culinary or pastry qualification preferred.
• Strong knowledge of pastry techniques, baking methods, and dessert production.
• Good understanding of food safety and hygiene standards.
• Ability to work independently and as part of a team.
• Strong attention to detail and presentation.
• Ability to work under pressure in a fast‑paced kitchen environment.
• Good communication and organizational skills.
