Chef de Partie – Rüya Specialty Restaurant

About the role

The Rüya specialty restaurant at St. Regis Dubai is seeking a Chef de Partie to prepare and present high‑quality dishes in a fast‑paced kitchen environment. The role involves managing station operations, ensuring food safety, and supporting the Chef with menu specials and inventory control.

Key responsibilities

• Prepare and cook menu items according to recipes, presentation standards, and food preparation checklists.
• Regulate temperature of ovens, broilers, grills, and roasters, and manage thawing and storage of ingredients.
• Maintain food logs, monitor portion sizes, and ensure proper garnish and plating.
• Communicate with service staff about menu specials, out‑of‑stock items, and excess food for daily specials.
• Assist in hiring, training, scheduling, and evaluating kitchen staff while upholding safety and hygiene policies.

Required profile

• Technical, trade or vocational school degree in culinary arts or related field.
• Minimum three years of relevant kitchen experience, preferably in a specialty or fine‑dining environment.
• Ability to stand for extended periods, lift up to 25 lb, and perform physical tasks such as bending, twisting, and reaching.
• Strong communication skills and a professional appearance.
