Chef de Partie – Seasonal Role at Netsu Japanese Steakhouse

About the role

Mandarin Oriental Jumeira is seeking a motivated Chef de Partie to join the Netsu Japanese Steakhouse team on a seasonal basis. You will be responsible for delivering high‑quality, authentic Japanese dishes while supporting the overall culinary operation in a luxury beachfront resort.

Key responsibilities

• Take full responsibility for food quality, presentation, and timely delivery of dishes in the Netsu Kitchen.
• Supervise a kitchen section, coordinate with other sections, and ensure compliance with standard quality and stock‑management procedures.
• Maintain up‑to‑date plating guides and ensure they are followed accurately.
• Monitor hygiene, food safety, and UAE municipal regulations, and enforce these standards with the team.
• Order and request ingredients daily, managing inventory and waste.
• Promote proactive communication across the Food & Beverage division to foster teamwork.

Required profile

• Demonstrated experience in a high‑volume, fine‑dining kitchen, preferably with Japanese cuisine.
• Strong commitment to quality, hygiene, and safety standards.
• Ability to lead a section, train junior staff, and work collaboratively.
• Growth‑mindset and willingness to embrace continuous improvement.

Required skills

• Expertise in food preparation, plating, and presentation techniques.
• Knowledge of stock management and ordering processes.
• Understanding of food safety regulations and HACCP standards.
