Chef de Partie – Seasonal Role at Netsu Japanese Steakhouse

About the role

Mandarin Oriental Jumeira in Dubai is seeking a Chef de Partie to join the Netsu Japanese Steakhouse kitchen team on a seasonal basis. You will be responsible for maintaining the highest standards of food quality and presentation while supervising your section and supporting the broader culinary operation.

Key responsibilities

• Take full responsibility for food quality, plating, and timely delivery of dishes.
• Supervise and coordinate your kitchen section, ensuring compliance with quality, hygiene, and safety standards.
• Manage daily ingredient ordering, stock control, and inventory in line with HACCP and UAE municipality regulations.
• Maintain up‑to‑date plating guides and ensure dishes are prepared authentically according to the Chef de Cuisine’s standards.
• Support inter‑departmental communication, attend shift briefings, and contribute to training and development of junior staff.

Required profile

• High School qualification; a degree or HND in Hospitality/Culinary Arts is preferred.
• Minimum three years’ experience as a Chef de Partie in a 5‑star hotel or high‑volume restaurant.
• International experience in at least two regions (Asia, Europe, North America, preferably Middle East).
• Experience with hotel pre‑opening or renovation projects is an advantage.

Required skills

• Excellent knowledge of various cooking methods, ingredients, equipment and processes.
• Strong understanding of HACCP and food safety standards.
• Competent computer skills, including MS Office.
• Ability to lead, motivate and support a diverse culinary team.
