Chef de Partie (Western Kitchen)

About the role

The Marriott Executive Apartments Sheikh Zayed Road in Dubai is looking for a Chef de Partie for its Western kitchen. The role covers preparing and cooking food according to recipes and quality standards, keeping food logs and supporting the kitchen team during busy periods.

Key responsibilities

• Prepare special meals or substitute items, and prepare cold foods.
• Regulate the temperature of ovens, broilers, grills and roasters, and pull food from freezer storage to thaw in the refrigerator.
• Ensure proper portion, arrangement and garnish, and monitor the quality and quantity of food prepared.
• Follow recipes, quality standards, presentation standards and the food preparation checklist.
• Maintain food logs and inform the Chef of excess food items for daily specials.
• Tell Food & Beverage service staff about menu specials and out-of-stock items.
• Anticipate guest service needs and communicate assistance required during busy periods.
• Assist management with hiring, training, scheduling, evaluating, counseling, disciplining and coaching staff, and act as a role model.
• Follow company and safety policies, report accidents and unsafe conditions, complete safety training and certifications, and keep a clean, professional appearance.

Required profile

• Preferred: a technical, trade or vocational school degree.
• Preferred: at least 3 years of related work experience.
• No supervisory experience required.
• Physical ability to stand, sit or walk for long periods, bend, twist and lift up to 25 pounds without assistance.
