Commis 1 - Butcher

About the role

Hilton is hiring a Commis 1 - Butcher for its Conrad Dubai hotel. You will join the award-winning culinary team and support daily kitchen operations through expert meat preparation, working closely with the chefs to maintain high standards of quality, consistency and food safety.

Key responsibilities

• Prepare meat daily: trimming, deboning, portioning, grinding, marinating and trussing, with consistent quality and presentation.
• Apply knowledge of meat cuts, anatomy, marbling and preparation techniques.
• Work with the Head Chef, Chef de Cuisine and Sous Chef to follow production plans and standardized recipes.
• Inspect incoming meat deliveries for freshness, quality and specifications.
• Operate and maintain butchery equipment safely, and guide Commis 2 and Commis 3.
• Follow approved recipes, portion sizes and presentation guidelines, and assist with stock monitoring, requisitions and rotation.
• Follow Hilton HACCP standards, Dubai Municipality food safety regulations and hygiene procedures, including temperature control, labeling and cross-contamination prevention.
• Keep butchery areas clean and organized, handle guest allergies and dietary requests carefully, and follow health and safety and emergency protocols.
• Support sustainability, complete timesheets and kitchen records, attend culinary briefings and training, and adapt to a busy kitchen environment.

Required profile

• A passion for hospitality, integrity, teamwork, ownership and a focus on the present.
• Ability to work confidently in a busy kitchen, including chilled preparation areas.
