Commis 1 – Garde Manger Production

About the role

The Commis 1 – Garde Manger Production supports the cold‑kitchen operations at W Hotels on Yas Island, Abu Dhabi. You will prepare and present a variety of cold dishes, ensuring quality, consistency, and adherence to recipe standards while maintaining a safe and efficient work environment.

Key responsibilities

• Prepare cold foods, special meals, and substitute items according to recipes and presentation standards.
• Regulate temperatures of ovens, broilers, grills, and roasters; manage thawing of frozen items in refrigeration.
• Maintain accurate food logs, monitor portioning, arrangement, and garnish of dishes.
• Communicate with chefs and service staff about menu specials, excess items, and out‑of‑stock items.
• Assist in hiring, training, scheduling, and evaluating team members as needed.
• Follow all safety, security, and company policies; report maintenance issues and incidents.
• Uphold professional appearance and protect confidential company information.

Required profile

• Technical, trade or vocational school education.
• At least 3 years of experience in garde‑manger or related culinary production.
• No prior supervisory experience required.
• Ability to stand, walk, bend, lift up to 25 lb and perform repetitive kitchen tasks.

• Food preparation and cold‑kitchen techniques.
• Knowledge of temperature control for ovens, grills and roasters.
• Accurate portioning, garnishing and food presentation.
• Understanding of food safety and hygiene standards.
