Commis 2 – European Cuisine

About the role

The Commis 2 supports the European cuisine kitchen by preparing ingredients, cooking dishes, and maintaining high standards of hygiene and safety. This role works closely with the culinary team to ensure every plate meets Marriott’s quality and presentation expectations.

Key responsibilities

• Prepare ingredients, including portioning, chopping and storing food.
• Wash and peel fresh fruits and vegetables.
• Weigh, measure and mix ingredients.
• Prepare and cook food according to recipes, quality and presentation standards.
• Prepare cold foods and operate ovens, stoves, grills, microwaves and fryers.
• Test foods for doneness and monitor food quality during preparation.
• Set up and break down work stations and serve food in proper portions.
• Wash and disinfect kitchen area, tools, knives and equipment.
• Check and ensure correct temperature of appliances and food.
• Follow safety and security policies, report maintenance needs and maintain a clean uniform.

Required profile

• High school diploma or G.E.D. equivalent.
• At least 1 year of related kitchen or food‑preparation experience.
• No supervisory experience required.
• No specific license or certification required.

Required skills

• Operating ovens, stoves, grills, microwaves and fryers.
• Food preparation techniques such as portioning, chopping, measuring and mixing.
• Cooking according to recipes and quality standards.
• Food safety practices and temperature monitoring.
• Kitchen sanitation and equipment cleaning.
