Commis 2 – Villa Toscana

About the role

The Villa Toscana kitchen at St. Regis Abu Dhabi is looking for a motivated Commis 2 to support the culinary team in delivering Italian fine‑dining experiences. You will work closely with the chef de partie and sous‑chef to ensure seamless service for our luxury guests.

Key responsibilities

• Review daily production sheets with the chef de partie or sous‑chef and take over when they are absent.
• Prepare and, when required, delegate the production of food items according to standards, ensuring uninterrupted guest service.
• Train junior talent and apprentices in culinary techniques.
• Maintain a clean, organized workstation, including fridges, freezers, countertops and stovetops.
• Control over‑production and food waste, manage rotation, labeling and storage to minimise costs.
• Operate all kitchen equipment safely and report any deficiencies promptly.
• Ensure all food handling complies with hotel and government safety guidelines.
• Complete opening and closing station procedures, log activities in the kitchen log book, and conduct line checks.

Required profile

• Minimum of 2 years experience in an Italian fine‑dining restaurant within a luxury hotel.
• Strong knowledge of food safety, hygiene standards and kitchen equipment operation.
• Ability to train and mentor junior staff while maintaining high service standards.
