Commis I – Butchery (Hotel Kitchen)

About the role

We are seeking a Commis I – Butchery to join our vibrant team at Radisson Dubai Damac Hills. In this role you will ensure the highest standards of meat preparation, quality, and food safety while supporting the kitchen team in delivering exceptional dining experiences for our guests.

Key responsibilities

• Prepare, portion, trim, debone and store meat, poultry and seafood according to recipes and portion control guidelines.
• Handle, label, store and rotate all meat products in line with HACCP and food safety standards.
• Maintain hygiene, cleanliness and sanitation within the butchery area, equipment and cold storage.
• Assist senior chefs with mise en place and production requirements for hotel outlets and events.
• Monitor stock levels, report shortages or quality concerns, and help minimise waste.

Required profile

• Prior kitchen experience is beneficial but not essential; a hands‑on, can‑do attitude is required.
• Personal integrity and a commitment to delivering exceptional guest service.
• Knowledge of basic butchery techniques such as cutting, trimming, deboning and portioning.
• Strong knife skills with proper handling, sharpening and maintenance.
• Understanding of food safety, hygiene standards and proper storage of raw meat.
