Demi Chef de Partie – Butchery

About the role

We are currently seeking a Demi Chef de Partie – Butchery to join our vibrant team at Radisson Hotel Group in Dubai. The role supports the smooth running of the kitchen’s butchery operations, ensuring high quality and consistency across all outlets.

Key responsibilities

• Supervise daily preparation, trimming, deboning, portioning, marinating and storage of meat, poultry and seafood.
• Monitor stock levels, place requisitions and ensure proper receiving, storage, labeling and rotation in line with HACCP standards.
• Maintain product quality, presentation and portion control for hotel outlets, banquets and special events.
• Support inventory control by minimizing waste, maximizing yield and keeping accurate usage records.
• Provide guidance and training to Commis Chefs and kitchen team members.
• Ensure hygiene, cleanliness, sanitation and food safety standards are consistently met.

• Proven experience in a busy kitchen environment.
• Strong culinary skills with knowledge of food safety and hygiene regulations.
