Demi Chef de Partie – Butchery

About the role

As a Demi Chef de Partie – Butchery at Caravan by Our Habitas Hatta, you will support the culinary team by preparing, portioning and handling meat, poultry and seafood to the highest standards. Working closely with the Chef de Partie, you will ensure quality, food safety and responsible use of ingredients in a dynamic, adventure‑focused hospitality environment.

Key responsibilities

• Prepare, trim, debone and portion meat, poultry and seafood according to recipes and specifications.
• Receive, inspect and store deliveries, ensuring quality, freshness and correct temperature.
• Maintain accurate portion control to support consistency, food cost management and waste reduction.
• Uphold HACCP, hygiene and sanitation standards in the butchery area and cold storage.
• Monitor stock levels, communicate requirements and assist with inventory control.
• Support junior colleagues by sharing correct butchery techniques and safe working practices.

Required profile

• Previous experience as a butcher or Demi Chef de Partie in a hotel, resort or professional kitchen.
• Strong knowledge of HACCP, food hygiene and temperature control.
• Ability to work efficiently in chilled environments and handle physical demands of a busy kitchen.

Required skills

• Meat, poultry and seafood butchery techniques (trimming, deboning, portioning).
• Knife and cutting equipment handling with safety compliance.
• Food safety and HACCP compliance.
