Deputy Sushi Master – Sous Chef Level

About the role

The Deputy Sushi Master supports the Sushi Master in delivering the high‑standard Japanese dining experience at L'Abysse Dubai. You will ensure strict adherence to brand quality, HACCP safety standards and guest expectations while developing your own expertise in nigiri preparation.

Key responsibilities

• Prepare, cut and mise en place nigiri according to L'Abysse standards, guaranteeing consistency, precision and taste.
• Lead the sushi counter service during service periods and step in for the Sushi Chef when required.
• Collaborate with the Sushi Master to develop new nigiri creations, embracing creativity and innovation.
• Train and mentor commis or interns, passing on knowledge and maintaining high personal and team presentation.
• Check deliveries for quality and quantity, monitor restaurant performance metrics and control food cost.
• Ensure full compliance with HACCP and all hygiene standards, continuously seeking improvements.

Required profile

• Culinary school diploma or equivalent with at least 3 years experience in a 5‑star hotel kitchen.
• Fluent in English to communicate effectively with guests and team members.
• Strong knowledge of Food Safety systems, specifically HACCP.

Required skills

• Knowledge of HACCP food safety system.
• Fluency in English.
