Director of Food & Beverage

About the role

Fairmont The Palm, a luxury resort on Palm Jumeirah, is seeking an experienced Director of Food & Beverage to lead its diverse F&B portfolio. Reporting to the Hotel Manager, you will oversee 11 outlets and drive service excellence for both hotel guests and external visitors.

Key responsibilities

• Lead and manage day‑to‑day operations of the Food & Beverage division, ensuring all service standards are followed.
• Drive innovative promotions, menus and concepts to create a destination of choice for hotel and external guests.
• Prepare annual budgets, control food, beverage, labour and operating expenses, and achieve financial targets.
• Oversee recruitment, training and development of all F&B colleagues, ensuring timely hiring and career growth.
• Maintain and continuously improve guest service standards, product quality and profitability.

Required profile

• 7‑10 years progressive leadership experience in luxury hotel Food & Beverage operations, preferably in a union environment.
• Previous Director‑level experience in a luxury hotel or high‑end restaurant setting.
• University/College degree in a related discipline.
• Strong interpersonal and problem‑solving abilities.
• Ability to work well under pressure in a fast‑paced environment.
