Executive Director, Food & Beverage Development

About the role

Lead and support the development and implementation of innovative Food & Beverage concepts across the Raffles and Fairmont brands. Ensure new openings, renovations and strategic projects deliver distinctive, commercially successful and brand‑aligned dining experiences that enhance guest satisfaction and drive revenue.

Key responsibilities

• Lead end‑to‑end development of F&B concepts, from ideation to detailed proposition, aligning with brand standards and market trends.
• Oversee project delivery from concept approval through pre‑opening, managing timelines, budgets and quality.
• Collaborate with internal development, design and operations teams and external partners to integrate concepts into hotel projects.
• Act as primary liaison with hotel owners and stakeholders, presenting data‑driven recommendations and securing buy‑in.
• Monitor global F&B trends and translate insights into innovative offerings, evaluating partnerships with chefs and third‑party operators.
• Support post‑opening performance reviews and develop scalable concepts adaptable across the global portfolio.

Required profile

• Senior F&B development professional with 10‑15+ years of international experience in luxury hospitality.
• Proven track record in both hotel‑based F&B operations and standalone restaurant/bar concept creation.
• Strong stakeholder management, structured execution and ability to translate brand vision into commercially viable concepts.
• Deep understanding of luxury guest expectations, service standards and operational excellence.
• Experience delivering full lifecycle projects including concept development, pre‑opening and renovation.
