Executive Pastry Chef – Luxury Hotel

About the role

We invite you to join the world of luxury hospitality at Raffles Dubai as our Executive Pastry Chef. You will lead the pastry, bakery, chocolate, confectionery and dessert operations across all hotel outlets, ensuring the highest standards of quality, creativity and brand consistency.

Key responsibilities

• Define the culinary direction for pastry and bakery, creating innovative desserts, pastries, breads and seasonal collections that reflect the hotel’s luxury identity.
• Oversee daily production planning, inventory management and portion control to meet occupancy forecasts while minimizing waste and controlling food cost.
• Lead the training, coaching and performance management of the pastry team, fostering a culture of creativity, discipline and continuous improvement.
• Ensure full compliance with HACCP, food safety, allergen management and hotel sanitation standards across all pastry areas.
• Collaborate with purchasing, finance and other culinary departments to source premium ingredients, evaluate new equipment and optimise cost efficiency.
