Executive Sous Chef – Greek Cuisine

About the role

Wynn Al Marjan Island is seeking an Executive Sous Chef specialized in Greek cuisine to join its upcoming luxury resort in Dubai. The role involves leading the fine‑dining kitchen, creating innovative menus, and ensuring exceptional culinary standards for discerning guests.

Key responsibilities

• Assist in designing and developing innovative, high‑quality menus that reflect the latest culinary trends and seasonal ingredients.
• Ensure the highest standards of food preparation, presentation, and incorporation of locally sourced, sustainable ingredients.
• Lead, manage and motivate the culinary team, conduct regular training sessions, and schedule daily kitchen activities.
• Oversee day‑to‑day operations of the fine‑dining kitchen, maintain inventory, and ensure proper equipment maintenance.
• Ensure compliance with health and safety regulations, conduct inspections, and implement cleaning routines.
• Collaborate with restaurant management to plan successful dining experiences and control culinary costs.

Required profile

• Minimum of 5 years’ experience in a similar role within fine‑dining or luxury hospitality.
• Proven experience managing Michelin‑star level restaurants and large culinary teams.
• Strong ability to work with brand partners to create collaborative culinary experiences.
