Executive Sous Chef - Indian Brasserie

About the role

Wynn Al Marjan Island is preparing to open its first integrated resort in the UAE and is looking for an Executive Sous Chef to lead the Indian Brasserie kitchen. Reporting to the Executive Chef, you will be responsible for delivering high‑quality Indian cuisine in a fine‑dining environment while supporting the overall culinary vision of the resort.

Key responsibilities

• Assist in designing and developing innovative Indian menus that reflect current culinary trends and seasonal, locally sourced ingredients.
• Oversee daily kitchen operations, including food preparation, plating, and service standards.
• Manage and motivate a team of chefs and kitchen staff, providing training on best practices and safety protocols.
• Maintain inventory levels, control food costs, and ensure efficient use of supplies.
• Coordinate equipment maintenance and ensure compliance with health, safety, and sanitation regulations.
• Collaborate with restaurant management to plan special events and dining experiences.

Required profile

• Proven experience in a senior sous‑chef or executive chef role within Indian or fine‑dining establishments.
• Strong leadership and team‑building abilities.
• Commitment to using sustainable, locally sourced ingredients.
• Excellent organizational and communication skills.
