Executive Sous Chef – Southeast Asian Cuisine

About the role

Wynn Al Marjan Island is seeking an Executive Sous Chef to lead the Southeast Asian cuisine outlet within its upcoming integrated resort. The role reports to the Executive Chef and is responsible for delivering high‑quality, innovative dishes that showcase regional flavors while supporting the resort’s launch in 2027.

Key responsibilities

• Assist in designing and developing creative, seasonal menus that reflect current culinary trends.
• Maintain the highest standards of food preparation, presentation, and plating.
• Source and incorporate locally‑grown, sustainable ingredients.
• Lead, motivate and train kitchen staff, scheduling daily activities and ensuring teamwork.
• Oversee inventory control, stock checks and cost management to meet budget targets.
• Ensure compliance with health, safety and sanitation regulations, conducting regular inspections.
• Coordinate equipment maintenance and liaise with the maintenance team for repairs.
• Collaborate with restaurant management to plan and execute memorable dining experiences.

Required profile

• Proven experience as a Sous Chef or similar senior kitchen role, preferably in Southeast Asian or fine‑dining environments.
• Strong leadership and communication skills with a focus on staff development.
• Ability to work in a fast‑paced, high‑standards resort setting.
• Commitment to sustainability and use of local produce.
