Fish Monger – 5‑Star Luxury Hotel

About the role

Join a prestigious 5‑star luxury hotel on the Red Sea as a Fish Monger, responsible for delivering premium seafood to support exceptional dining experiences. You will work closely with the kitchen team to ensure the highest standards of quality, hygiene, and food safety.

Key responsibilities

• Receive, inspect, and verify the freshness of all seafood deliveries.
• Clean, scale, gut, fillet, skin, debone, and portion a variety of fish and seafood according to kitchen requirements.
• Store, label, and rotate seafood following FIFO procedures.
• Maintain cleanliness and sanitation of the preparation area, tools, and equipment.
• Follow HACCP, food safety, and hygiene standards at all times.
• Collaborate with chefs to prepare seafood per menu specifications.
• Minimize waste through proper handling and portion control.
• Monitor inventory, assist with stock control and ordering.
• Maintain cutting tools and equipment in safe working condition.

Required profile

• Minimum 3 years of experience as a Fish Monger, Seafood Butcher, or Fish Cutter in a 5‑star hotel, luxury resort, or high‑end seafood establishment.
• Strong knowledge of seafood species, handling, storage, and preparation techniques.
• Excellent knife skills, including filleting, deboning, and portioning.
• Good understanding of HACCP, food safety, and hygiene regulations.
• Ability to work efficiently in a fast‑paced kitchen environment.
• Strong attention to detail and commitment to high‑quality standards.
• Good teamwork and communication skills.
• Flexibility to work various shifts, including weekends and holidays.
• Must be currently residing in the UAE.
