Food and Drinks Manager

About the role

Hilton is hiring a Food and Drinks Manager for Conrad Dubai. You will lead food and beverage operations across restaurants, bars, in-room dining, banqueting and special events, driving revenue, operational excellence and quality and safety while shaping memorable dining experiences.

Key responsibilities

• Develop and implement food and beverage strategies aligned with hotel objectives, guest expectations and commercial goals.
• Inspire, mentor and develop venue managers and service leaders, and foster accountability and engagement.
• Oversee daily operations of restaurants, bars, lounges, in-room dining and banqueting services.
• Champion personalised service, anticipate guest needs and handle service recovery effectively.
• Maintain brand standards through regular operational walkthroughs of service, cleanliness, presentation and product quality.
• Manage budgets, forecasts and financial targets, optimising revenue, profitability, labour productivity and operating costs.
• Analyse profit and loss statements, sales reports and KPIs to find growth opportunities.
• Collaborate with culinary and bar leaders to improve menus, pricing, seasonal offerings and promotions.
• Ensure food safety, sanitation and workplace safety compliance with local regulations, HACCP principles and hotel policy.
• Support succession planning and career development for team members.
• Partner with Culinary, Finance, Marketing, Human Resources and Events teams, and continuously improve processes and service standards.
