Food & Beverage Operations Manager

About the role

The Food & Beverage Operations Manager will lead the dining outlets at Fairmont The Palm, ensuring exceptional guest experiences and efficient service delivery. Reporting to the F&B Director, you will create a positive team environment while maintaining high standards of food presentation, safety, and cost control.

Key responsibilities

• Oversee all food and beverage service areas, supervising staff in line with operating policies.
• Maintain accurate labor and operating cost records for monthly P&L and forecasting.
• Conduct daily briefings, on‑site coaching, and site visits to drive performance.
• Handle escalated guest complaints in‑person and respond to online feedback within 24 hours.
• Schedule regular staff meetings and monthly roundtables to communicate policy updates and gather feedback.
• Monitor inventory, quality of deliveries, and coordinate with sales representatives for supplies.
• Ensure proper food presentation, handling procedures, and compliance with HACCP standards.
• Support payroll preparation, bookkeeping, and budget management.
• Lead the rollout of new products, promotions, and activations.

Required profile

• Proven experience supervising food and beverage teams in a luxury hotel or resort environment.
• Strong organizational skills with the ability to prioritize tasks and meet deadlines.
• Excellent communication and coaching abilities, fostering a respectful and high‑performing team culture.
• Ability to remain calm and professional when dealing with irate customers.

Required skills

• Experience with restaurant guest satisfaction tracking software.
• Knowledge of HACCP standards and food safety procedures.
• Proficiency in inventory management software.
