General Manager - Southeast Asian Restaurant

About the role

Wynn Al Marjan Island is looking for a General Manager to lead its South‑East Asian Restaurant within the new integrated resort. The role oversees all aspects of restaurant operations, from service and culinary execution to financial performance, ensuring the brand’s standards and guest experience are consistently exceptional.

Key responsibilities

• Lead restaurant operations, including service, culinary, staffing and financial performance.
• Drive revenue growth while controlling costs, labor productivity and profitability.
• Monitor daily performance, analyse KPIs and implement continuous improvements.
• Coach, develop and evaluate department heads and team members to foster a performance‑driven culture.
• Collaborate with culinary and bar teams on menu development, promotions and personalised guest experiences.
• Ensure compliance with health, safety, licensing and hygiene regulations.
• Manage inventory, equipment and resources efficiently.
• Prepare and present regular operational and financial reports.

Required profile

• 3‑4 years’ experience as a General Manager or equivalent in a fine‑dining restaurant handling at least 50 covers per day.
• Experience in 2‑star or 3‑4‑hat Gault Millau establishments is preferred.
• Secondary school diploma; a bachelor’s degree in hospitality management is an advantage.
• International exposure in trend‑setting markets such as Tokyo, London, Paris, New York, Hong Kong, Australia, Singapore or Shanghai is a plus.
• Passion for food, wine and service, with Sommelier or WSET Level 2 certification considered an advantage.

Required skills

• Proficiency in MS Office.
• Experience with POS software.
• WSET Level 2 certification (or equivalent wine knowledge).
