Head Baker – Bakery & Pastry

About the role

The Head Baker – Bakery & Pastry leads bakery, pastry and dessert production for Daikan Izakaya and Daikan Ramen outlets across Dubai and Abu Dhabi. Reporting to the Executive Chef, the role ensures consistent quality, creates new Japanese‑inspired items and manages costs, waste and food‑safety compliance while travelling between sites with a personal car.

Key responsibilities

• Prepare breads, buns, pastries and desserts, maintaining consistent quality, taste, portioning and presentation across all outlets.
• Develop new bakery and dessert items, including Japanese‑inspired creations, and maintain standard recipes, costings and plating guides.
• Manage ingredient ordering, inventory, shelf‑life, food costs and wastage.
• Ensure compliance with HACCP, Dubai Municipality and ADAFSA requirements, including allergen control and proper storage.

Required profile

• Diploma or certificate in Bakery & Pastry Arts or equivalent professional training.
• Minimum 6 years bakery and pastry experience, with at least 2 years leading a pastry section in hotels or high‑volume restaurants.
• Ability to work independently across bakery and pastry production, including simple and high‑end desserts.
• Valid UAE driving licence, personal car, and food‑safety certificate (Dubai Municipality or ADAFSA).
