Head Chef

About the role

Marriott International is seeking an experienced Head Chef to lead the culinary operations at its Downtown Abu Dhabi hotel. The role combines hands‑on cooking with management of the kitchen team to ensure high‑quality food and guest satisfaction.

Key responsibilities

• Oversee daily kitchen operations and ensure consistent, high‑quality food production.
• Develop, design and update menus and recipes in line with brand standards.
• Maintain food safety, sanitation and temperature controls in compliance with regulations.
• Supervise kitchen staff, schedule shifts and coach team members.
• Manage purchasing, receiving, storage and control of food waste.
• Monitor budget, portion control and cost efficiency.
• Ensure equipment is maintained and report any malfunctions.
• Implement environmentally friendly practices for energy use and waste management.

Required profile

• High school diploma or GED with at least 4 years of culinary or food‑and‑beverage experience, or a 2‑year degree in Culinary Arts/Hotel Management with 2 years of experience.
• Proven ability to lead a kitchen team and deliver consistent product quality.
• Strong knowledge of local food‑handling laws and brand safety standards.
