About the role

Join the three‑Michelin‑star restaurant FZN in Dubai as Head Sommelier, leading an exceptional wine program that complements a distinctive tasting journey. Based at Atlantis, The Palm, you will oversee procurement, curation, service and guest engagement while working closely with the Executive Chef and service leadership team.

Key responsibilities

• Curate and manage FZN’s wine list and cellar, ensuring alignment with the restaurant’s identity and standards.
• Design and execute thoughtful wine pairings for the tasting menu and guide guests through memorable wine experiences.
• Mentor and develop a dynamic sommelier team, fostering a culture of learning and excellence.
• Oversee wine inventory management, cost control, and cellar maintenance.
• Maintain supplier relationships, ordering systems and compliance with licensing and storage regulations.

Required profile

• Extensive sommelier experience in Michelin‑starred or luxury fine‑dining environments.
• Deep knowledge of global wine regions, producers and vintages with a refined palate.
• Proven leadership and mentorship abilities to inspire a high‑performing team.
• Exceptional communication and storytelling skills to create educational, guest‑focused wine experiences.
• Strong operational acumen in inventory, cost control and regulatory compliance.
• Collaborative mindset, able to work seamlessly with chefs, service staff and management.
