Head Sushi Chef – Luxury Resort

About the role

The InterContinental Ras Al Khaimah Mina Al Arab Resort & Spa is seeking a Head Sushi Chef to lead its signature Japanese dining experience. You will shape the culinary vision, ensure authentic and innovative sushi offerings, and uphold the highest standards of luxury hospitality.

Key responsibilities

• Lead all aspects of the sushi kitchen, guaranteeing exceptional quality, consistency, and presentation.
• Develop authentic and seasonal Japanese menus, including sushi, sashimi, nigiri, maki, and omakase creations.
• Manage food preparation, production, and service to meet luxury hospitality standards.
• Coach, mentor, and develop the sushi kitchen team to achieve operational excellence.
• Maintain strict compliance with HACCP, food safety, hygiene, and sanitation standards.
• Control food costs, inventory, purchasing, and waste to meet financial targets.

Required profile

• Proven experience as a Head Sushi Chef, Sushi Chef de Cuisine, or senior sushi chef in a luxury hotel or premium Japanese restaurant.
• Strong leadership and team‑development abilities.
• Excellent knowledge of HACCP and food‑safety regulations.
• Good English communication skills.
• Culinary qualification or relevant certification is preferred.
