Italian Chef De Cuisine

About the role

The Italian Chef De Cuisine will lead the culinary operations of the hotel’s Italian restaurant, ensuring the highest standards of quality, consistency and guest satisfaction. This senior position combines hands‑on cooking with team leadership, menu development and cost control.

Key responsibilities

• Oversee daily kitchen operations, maintaining food safety, sanitation and culinary standards.
• Develop, design and execute menu items, manage purchasing, portion control and budgeting.
• Supervise and train kitchen staff, fostering cross‑training and continuous improvement.
• Coordinate with front‑of‑house to address guest feedback and resolve complaints.
• Monitor production quantities, plating requirements and ensure timely service.
• Maintain compliance with all applicable laws, regulations and Marriott policies.

Required profile

• High school diploma/GED with at least 4 years culinary experience, or a 2‑year degree in Culinary Arts/Hotel Management with 2 years experience.
• Proven ability to lead a kitchen team, manage budgets and deliver high‑quality Italian cuisine.
• Strong communication, coaching and problem‑solving skills.
