Japanese Chef

About the role

The Japanese Chef will lead a dedicated kitchen station at Rixos Marina Abu Dhabi, delivering authentic Japanese cuisine with the highest standards of quality, consistency and presentation. This role combines hands‑on cooking, staff development and close collaboration with other hotel departments to ensure seamless service.

Key responsibilities

• Manage assigned kitchen station, ensuring dishes are prepared, cooked and presented according to recipes and standards.
• Oversee ingredient, sauce and garnish preparation, maintaining food quality, consistency and portion control.
• Train, mentor and develop junior kitchen staff on operating standards, food safety and HACCP procedures.
• Maintain strict food safety, hygiene and HACCP compliance through regular inspections and quality checks.
• Manage inventory for the station, monitor stock levels, minimise waste and optimise cost efficiency.
• Collaborate with other departments to ensure seamless kitchen operations and efficient service delivery.
• Contribute to menu development, offering innovative ideas while maintaining consistency with standards.

Required profile

• Relevant culinary experience in a luxury hotel or fine‑dining establishment.
• Strong knowledge of advanced cooking techniques, culinary practices and food safety standards.
• Proficiency with MS Office applications and kitchen management systems.
• Excellent organisational, time‑management and communication skills in a multicultural environment.
