Lobby Lounge Manager

About the role

The Lana, a Dorchester Collection hotel in Dubai, is looking for a full-time permanent Lobby Lounge Manager within its Food & Beverage division. The role leads the day-to-day operations of the restaurant, builds and develops the team and ensures revenue targets are met while costs stay within budget.

Key responsibilities

• Spearhead the day-to-day operations of the restaurant so guests receive the best possible experience.
• Hire, mentor and develop the team through a training and development programme, helping to attract talent.
• Monitor revenue targets and keep costs under control within pre-set budgets, including beverage cost, payroll and other expenses.
• Hold a daily team briefing before service to brief the team on hotel events and the coming service.
• Liaise with other departments to keep the outlet's presentation, cleanliness and maintenance (furniture, equipment, floors, fixtures and fittings) at a high standard.
• Work with the hostesses to optimise reservations for productivity, guest satisfaction and revenue.
• Ensure high-quality beverage preparation and presentation and control beverage inventory.

Required profile

• Proven managerial track record leading a team in an ultra-luxury setting.
• Relevant professional certification or hotel school diploma.
• Past management experience in afternoon tea service, in ultra-luxury hotels and restaurants in the Middle East, and in at least one other continent (Europe, Asia or the USA).
• Fluent English; Arabic, Italian, French, Spanish or German is highly desirable.
