Pastry Chef de Partie

About the role

Fairmont Bab Al Bahr, a 5-star beach resort in Abu Dhabi, is looking for a full-time Pastry Chef de Partie. The post manages a designated pastry section and ensures the preparation, presentation and quality of pastries, desserts, cakes, breads and confectionery served throughout the hotel.

Key responsibilities

• Prepare, produce and present high-quality pastries, desserts, cakes, chocolates, breads and bakery products according to hotel standards and recipes.
• Manage the day-to-day operations of the pastry section and ensure consistency in taste, texture, presentation and portion control.
• Assist in developing new dessert concepts, seasonal menus and innovative pastry offerings.
• Monitor production levels to meet demand while minimising waste, and conduct quality checks on ingredients and finished products.
• Follow HACCP, food safety, sanitation and hygiene procedures, and report quality concerns or equipment issues to the Executive Pastry Chef.
• Supervise and support Commis Chefs, Demi Chef de Parties, trainees and apprentices, providing on-the-job training and monitoring staff performance.
• Help with inventory management, stock control and requisitions, and support cost-control and productivity objectives.
• Take part in special events, banquets, weddings and VIP functions, and accommodate guest dietary needs and allergies.

Required profile

• Minimum 2-4 years of pastry experience in an upscale hotel, luxury resort, fine dining establishment or renowned pastry operation.
• Previous experience as Demi Chef de Partie - Pastry or equivalent preferred.
• Experience in large-scale banquet production is advantageous.
