Pastry Commis II – Full-time

About the role

We are seeking a motivated Pastry Commis II to join the culinary team at Fairmont The Palm in Dubai. Working under the Chef de Partie, you will support daily pastry production, ensuring high standards of quality, hygiene and service in a luxury five‑star hotel environment.

Key responsibilities

• Assist the Chef de Partie with mise‑en‑place preparation and service in the pastry section.
• Execute orders received from the Chef de Partie accurately and timely.
• Complete daily checklists for mise‑en‑place and food storage.
• Prepare daily wine, dry store and food requisitions and kitchen transfers for approval.
• Maintain effective communication with fellow kitchen staff (Heartists) and motivate the team.
• Follow recipe specifications for portion size, quantity and quality.
• Attend daily briefings and any additional meetings as required.
• Monitor banquet updates and relay information to the next shift.
• Report equipment issues and ensure corrective actions are taken.
• Uphold Hygiene and HACCP records in line with hotel standards.

Required profile

• Completed a kitchen apprenticeship or chef training course (minimum one year).
• 2–3 years of experience in a five‑star international hotel or similar establishment.
• Ability to read and interpret recipes with solid cooking knowledge.
• Strong communication skills.
• Eligibility to live and work in Dubai.
