Pre-Opening F&B Strategist

About the role

A landmark hotel in Dubai that is about to open is looking for a Pre-Opening F&B Strategist to conceptualize and operationalize its entire food and beverage landscape. The role builds a world-class F&B portfolio from the ground up, covering everything from high-volume all-day dining to signature restaurants, lounges and nightlife venues.

Key responsibilities

• Lead the conceptualization and development of all hotel F&B outlets, from all-day dining to specialty restaurants, lounges and nightlife venues.
• Carry out market analysis to identify gaps, trends and opportunities in the competitive Dubai F&B scene.
• Develop business plans, financial projections (budgets, P&L, feasibility studies) and unique selling propositions for each concept.
• Recruit key culinary and service talent, including Executive Chefs and Outlet Managers.
• Oversee menu engineering, kitchen and restaurant design with architects, and negotiate supplier contracts.
• Create and run the pre-opening budget, marketing strategy and training programmes for the F&B division.

Required profile

• Minimum 10 years of progressive F&B leadership experience, with a proven track record in pre-opening roles for luxury hotels or renowned restaurant groups.
• Experience managing multi-outlet P&Ls and large pre-opening budgets.
• Deep understanding of global culinary trends, especially in the Middle East market.
• Outstanding leadership and recruitment skills, and strong project management skills to coordinate departments, designers and contractors.
