Restaurant Manager – Peacock Alley, Waldorf Astoria Dubai

About the role

The Restaurant Manager will lead day‑to‑day operations of Peacock Alley, the Cigar Lounge and Waqud Café at the Forbes Five‑Star Waldorf Astoria Dubai International Financial Centre, ensuring luxury‑standard food, beverage and service experiences for guests.

Key responsibilities

• Drive commercial performance by achieving revenue, profitability and guest‑satisfaction targets across all three venues.
• Partner with culinary and beverage teams to develop innovative menus, drink programmes and premium cigar offerings.
• Lead, coach and develop a high‑performing team, fostering an inclusive and service‑focused culture.
• Maintain strict compliance with health, safety, food‑safety, licensing and brand standards.
• Oversee budgeting, forecasting, payroll, inventory control and cost‑management processes.
• Manage guest relations, VIP experiences and resolve service issues to exceed expectations.

Required profile

• Proven leadership experience in luxury food & beverage venues.
• Strong beverage knowledge including tea, coffee, cocktails and premium spirits.
• Excellent cigar knowledge and familiarity with premium cigar service.
• Impeccable grooming and professional presentation.
• Commercial focus with a track record of revenue growth and cost control.
• Inspirational people‑management skills and ability to develop high‑performing teams.
