Senior Chef de Partie – Kaiseki (Japanese)

About the role

We are seeking a Senior Chef de Partie to lead the Kaiseki (Japanese) section at Four Seasons Dubai DIFC. The role involves preparing authentic kaiseki‑style dishes with meticulous attention to taste, seasonality, presentation and portion control, while supporting menu development and daily kitchen operations.

Key responsibilities

• Prepare and present kaiseki‑style dishes, ensuring high standards of taste, seasonal ingredients and artistic plating.
• Assist in creating seasonal menus and course progression based on traditional kaiseki principles.
• Support daily kitchen operations, including mise en place, food preparation and timely service.
• Maintain cleanliness and proper setup of the Japanese kitchen area throughout the shift.
• Ensure food safety and hygiene in line with HACCP standards.
• Train and mentor junior chefs in Japanese cooking techniques and kitchen discipline.
• Monitor stock levels, report shortages and ensure proper storage of ingredients.

Required profile

• Minimum 5 years of experience in Japanese fine dining, specifically kaiseki cuisine.
• Strong understanding of kaiseki philosophy, structure and seasonal ingredients.
• Excellent knife skills and mastery of Japanese cooking techniques.
• Commitment to food quality, consistency and artistic presentation.
• Ability to communicate effectively with the service team and mentor junior staff.
