Sous Chef - Lebanese Specialty

About the role

Fairmont Bab Al Bahr, a 5-star beach resort in Abu Dhabi, is looking for a Sous Chef for its Lebanese specialty restaurant. The role oversees the preparation, production and presentation of authentic Lebanese cuisine, supporting the Executive Chef in kitchen operations, supervising culinary colleagues and maintaining luxury hospitality standards.

Key responsibilities

• Prepare, cook and present authentic Lebanese dishes to luxury hotel standards, with consistent taste, portion control and presentation.
• Develop and recommend innovative Lebanese and regional menu items while preserving traditional techniques, and take part in menu planning, seasonal promotions and special culinary events.
• Supervise, train, motivate and develop kitchen team members, conduct daily briefings and guide junior chefs in Lebanese cuisine.
• Monitor food production against recipes, handle guest preferences, dietary needs and allergy requests, and respond promptly to guest feedback.
• Ensure compliance with HACCP, food safety and sanitation standards, keep kitchens clean and inspect health and safety compliance.
• Control food costs through purchasing, portion control and waste minimisation, monitor inventory, stock counts and product storage.
• Assist in performance evaluations, talent development and budgetary and financial goals.

Required profile

• Minimum 4-6 years of culinary experience in luxury hotels, upscale restaurants or fine-dining establishments.
• At least 2 years in a supervisory culinary role.
• Extensive hands-on experience in authentic Lebanese cuisine.
• Experience in an international luxury hospitality environment is preferred.
